  • ½ tsp black pepper

Instructions

  1. Combine diced zucchini, onions, peppers, and salt in a large bowl.
  2. Let the mixture stand for 2 hours, then drain and rinse thoroughly.
  3. In a large pot, combine white vinegar, sugar, celery seed, turmeric, dry mustard, and black pepper.
  4. Bring the mixture to a boil over medium heat.
  5. Add the drained vegetables to the pot and stir well.
  6. Simmer for 15 minutes, stirring occasionally, until vegetables are tender.
  7. Carefully pack the hot relish into sterilized jars.
  8. Process jars in a boiling water bath for 10 minutes to seal.
  9. Cool, label, and store jars in a cool, dark place.

Notes

Substitute yellow squash for zucchini or sweet bell peppers for a milder taste. Use apple cider vinegar for a fruitier tang if desired. The relish can be made ahead and improves in flavor after a week. Store unopened jars in a cool, dark place for up to 1 year; refrigerate after opening and use within a month. If your relish is too watery, simmer longer. For crisper relish, avoid overcooking. Use non-reactive pots for best flavor retention.
