  • 2 cups zucchini, shredded and squeezed dry
  • 1 cup Panko bread crumbs
  • 2 eggs
  • 1/3 cup freshly grated Parmesan cheese
  • 1/4 cup finely shredded mozzarella cheese
  • 2 garlic cloves, minced
  • Salt, to taste
  • Fresh cracked black pepper, to taste

Instructions

  1. Grate the zucchini and squeeze out as much liquid as possible using a mesh bag or clean kitchen towel.
  2. In a large bowl, combine the squeezed zucchini, Panko bread crumbs, eggs, Parmesan cheese, mozzarella cheese, minced garlic, salt, and black pepper. Mix until well combined.
  3. Heat the canola oil in a large skillet over medium heat.
  4. Scoop the zucchini mixture and shape it into small fritters about 2 to 3 inches wide.
  5. Place the fritters in the hot skillet and cook for 4 to 6 minutes on each side, or until golden brown and crispy.
  6. Remove the fritters from the skillet and serve immediately while hot and crisp.

Notes

For gluten-free fritters, substitute regular Panko with gluten-free breadcrumbs. Substitute canola oil with olive or avocado oil. For a dairy-free version, use plant-based cheeses. Fritters can be made ahead and reheated in an oven to retain crispiness; cool completely before storing in an airtight container in the fridge for up to 3 days. If fritters are too wet, add more breadcrumbs. To prevent sogginess, always squeeze zucchini very well.
