  • 1 teaspoon prepared mustard
  • 1/2 teaspoon garlic salt

Instructions

  1. In a large skillet, cook sausage over medium heat for 5 to 7 minutes or until no longer pink, breaking it into crumbles. Drain and remove sausage from pan.
  2. In the same pan, heat oil over medium heat. Add zucchini and onion; cook and stir for 5 to 7 minutes or until tender.
  3. Stir in sausage, tomatoes, rice, mustard, garlic salt, and pepper. Bring to a boil. Reduce heat; simmer, covered, for 5 minutes to allow flavors to blend.
  4. Remove from heat; sprinkle with cheese. Let stand, covered, 5 minutes or until cheese is melted.

Notes

For a lighter option, substitute turkey sausage or use vegetarian sausage. Brown rice or quinoa can be used instead of white rice for added fiber and nutrients. Shredded mozzarella or a dairy-free cheese blend can replace cheddar. Make this casserole ahead, refrigerating up to 2 days; reheat gently on the stovetop or in the microwave. Store leftovers in an airtight container for up to 3 days. If the casserole is too watery, simmer uncovered briefly to reduce. For extra flavor, add Italian seasoning or fresh herbs.
