Ingredients
- 1 sheet ready-rolled puff pastry, thawed
- 1/2 cup ricotta cheese
- 1/4 cup cream cheese
- 2 tablespoons lemon zest
- 1 tablespoon lemon juice
- 2 tablespoons honey
- 1/2 teaspoon vanilla extract
- 1 cup mixed berries (blueberries, raspberries, and strawberries, chopped if large)
- 1 egg, beaten (for egg wash)
- 2 tablespoons granulated sugar (for sprinkling)
- fresh mint leaves for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine ricotta, cream cheese, lemon zest, lemon juice, honey, and vanilla extract; mix until smooth.
- Roll out puff pastry on a lightly floured surface and cut into 6 squares.
- Place a spoonful of cheese filling in the center of each pastry square and top with a few mixed berries.
- Fold pastries diagonally to form triangles and seal edges with a fork.
- Brush tops with beaten egg and sprinkle with granulated sugar.
- Bake for 18–20 minutes, or until golden brown and puffed.
- Cool slightly before garnishing with fresh mint leaves, if desired, and serve warm or at room temperature.
Notes
Substitute ricotta with cottage cheese or mascarpone if unavailable. Use any favorite berries or stone fruits based on season; frozen berries work, but limit excess juice. Assemble pies ahead and refrigerate up to 24 hours before baking, or freeze unbaked for a longer period. Baked pies stay fresh refrigerated for 2 days; reheat in the oven for best texture. Ensure the pastry edges are sealed well to avoid leakage, and avoid overfilling to prevent sogginess.
