Scale
Crust
- 2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter (melted)
Filling
- 16 oz cream cheese (softened)
- 3/4 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1 cup melted white chocolate
- 1 cup fresh or frozen blueberries
Topping
- 1/2 cup blueberry preserves (or fresh blueberry sauce)
- White chocolate shavings optional
Instructions
- 1. Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.
- 2. Mix graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of the pan. Bake for 8-10 minutes, then let cool.
- 3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla and sour cream.
- 4. Melt the white chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth. Gradually mix the melted white chocolate into the cream cheese mixture. Gently fold in the blueberries.
- 5. Pour the filling over the crust. Bake for 50-60 minutes, or until the center is set but slightly jiggly. Let the cheesecake cool at room temperature, then refrigerate for at least 4 hours or overnight.
- 6. Spread blueberry preserves or sauce over the chilled cheesecake. Garnish with white chocolate shavings for an elegant touch.
