Ingredients
- 12 ounces tri-color rotini pasta
- 1 cup sugar snap peas, diced
- 1 cup seedless cucumber, diced
- 1/2 cup green onions, sliced
- 1/3 cup red onion, diced
- 1 cup mini tri-colored peppers, sliced
- 1 cup frozen shelled edamame, thawed
- 1 package mini chicken and cilantro wontons (Trader Joe’s, about 24 wontons)
- 1 (12-ounce) bottle creamy poppy seed dressing
Instructions
- Cook tri-color rotini according to package directions until al dente, about 7 to 9 minutes.
- Drain pasta and rinse with cold water, allowing it to cool completely.
- Cook mini wontons in boiling water for 2 minutes or add to pasta pot during the final 2 minutes of cooking.
- Drain wontons, rinse with cold water, and cool completely.
- Dice all vegetables into uniform 1/4 to 1/2 inch pieces.
- In a large bowl, combine cooled pasta, wontons, vegetables, and thawed edamame.
- Pour the entire bottle of poppy seed dressing over the mixture.
- Toss gently but thoroughly to coat everything.
- Cover and refrigerate overnight to allow flavors to meld.
Notes
Substitute gluten-free rotini for a gluten-free version and tofu wontons to make it vegetarian. For a lighter dressing, use half the amount or a vinaigrette. Make ahead and refrigerate up to 2 days; store in an airtight container. If salad seems dry after refrigeration, toss with a little extra dressing before serving. Prevent sogginess by cooling pasta and wontons thoroughly before combining. Add more edamame or vegetables for extra crunch.
