Description

Asian Pasta Salad with Edamame and Crispy Wontons is a vibrant, refreshing dish that blends tender tri-color rotini, colorful diced vegetables like sugar snap peas, cucumbers, red and green onions, and mini peppers with protein-rich edamame and crispy mini chicken & cilantro wontons. Generously tossed in creamy poppy seed dressing and chilled overnight, this pasta salad bursts with flavors and textures, making it perfect for picnics, potlucks, or a bright family meal.


Ingredients

  • 12 ounces tri-color rotini pasta
  • 1 cup sugar snap peas, diced
  • 1 cup seedless cucumber, diced
  • 1/2 cup green onions, sliced
  • 1/3 cup red onion, diced
  • 1 cup mini tri-colored peppers, sliced
  • 1 cup frozen shelled edamame, thawed
  • 1 package mini chicken and cilantro wontons (Trader Joe’s, about 24 wontons)
  • 1 (12-ounce) bottle creamy poppy seed dressing


Instructions

  1. Cook tri-color rotini according to package directions until al dente, about 7 to 9 minutes.
  2. Drain pasta and rinse with cold water, allowing it to cool completely.
  3. Cook mini wontons in boiling water for 2 minutes or add to pasta pot during the final 2 minutes of cooking.
  4. Drain wontons, rinse with cold water, and cool completely.
  5. Dice all vegetables into uniform 1/4 to 1/2 inch pieces.
  6. In a large bowl, combine cooled pasta, wontons, vegetables, and thawed edamame.
  7. Pour the entire bottle of poppy seed dressing over the mixture.
  8. Toss gently but thoroughly to coat everything.
  9. Cover and refrigerate overnight to allow flavors to meld.

Notes

Substitute gluten-free rotini for a gluten-free version and tofu wontons to make it vegetarian. For a lighter dressing, use half the amount or a vinaigrette. Make ahead and refrigerate up to 2 days; store in an airtight container. If salad seems dry after refrigeration, toss with a little extra dressing before serving. Prevent sogginess by cooling pasta and wontons thoroughly before combining. Add more edamame or vegetables for extra crunch.
