Bursting with fresh or frozen mixed berries enhanced by lemon zest and juice, this dessert balances flavors and textures beautifully. The easy, three-part assembly—crust, filling, and topping—makes it perfect for all skill levels. Serve warm for a crowd-pleasing finale at any gathering.

Ingredients

Scale
  • ⅔ cups cold vegan butter, cubed
  • 2 cups flour
  • ¼ teaspoon salt
  • 67 tablespoons ice water
  • 4 cups mixed berries, fresh or frozen
  • ¾ cups granulated sugar
  • 2 tablespoons cornstarch
  • 1 lemon, zested
  • Juice of half a lemon
  • 1 stick unsalted vegan butter, melted
  • ½ cup granulated sugar
  • ⅔ cups flour
  • Pinch of salt

Instructions

  1. Preheat oven to 400°F (204°C).
  2. Combine cubed vegan butter, 2 cups flour, and ¼ teaspoon salt in a bowl until the mixture is crumbly.
  3. Add ice water one tablespoon at a time until the dough forms.
  4. Press dough evenly into a tart pan, score with a fork, and bake for 10-12 minutes.
  5. Lower oven temperature to 375°F (190°C).
  6. Toss berries with ¾ cups sugar, 2 tablespoons cornstarch, lemon zest, and juice of half a lemon.
  7. Mix melted vegan butter, ½ cup sugar, ⅔ cups flour, and a pinch of salt for the topping.
  8. Spread berry mixture into the pre-baked crust.
  9. Crumble topping evenly over the berries.
  10. Bake for 35-40 minutes, until topping is golden and filling is bubbling.
  11. Allow to cool for 10-15 minutes before serving.

Notes

Substitute gluten-free flour for a gluten-free version. Any blend of berries—blueberries, raspberries, strawberries, or blackberries—works well. For lower sugar, reduce granulated sugar or use a sugar substitute. The crisp can be assembled ahead, refrigerated, and baked just before serving. Store leftovers covered in the fridge for up to 4 days; reheat to refresh the topping. If topping gets soggy, broil for 1-2 minutes to crisp up. Avoid over-mixing crust for best texture.
