  • 1/4 cup melted coconut oil
  • 1/3 cup pure maple syrup
  • 1 tablespoon vanilla bean paste
  • pinch of sea salt
  • 1/4 cup mini white chocolate chips (optional)

Instructions

  1. In a medium bowl, combine almond flour and shredded coconut.
  2. Add melted coconut oil, pure maple syrup, vanilla bean paste, and a pinch of sea salt. Mix until well combined.
  3. Fold in mini white chocolate chips, if using.
  4. Scoop tablespoon-sized portions and roll into balls using your hands.
  5. Place the bites on a parchment-lined tray.
  6. Refrigerate for at least 30 minutes or until firm.
  7. Store bites in an airtight container in the refrigerator.

Notes

You can substitute almond flour with cashew flour or oat flour for a nut-free version. Maple syrup may be swapped for honey or agave nectar. To make ahead, shape balls and refrigerate up to a week or freeze for 2 months. For best texture, keep chilled as coconut oil softens at room temperature. If mixture is too dry, add 1–2 teaspoons more coconut oil. If too wet, add a bit more almond flour.
