Ingredients
- 1 box white cake mix (15.25 ounces)
- 3/4 cup all-purpose flour
- 1 cup salted butter, softened
- 1 1/4 cups caramel bits
- 1 tablespoon heavy cream
- 1 cup semi-sweet chocolate chips or mini semi-sweet chocolate chips
- 1/2 tablespoon salted butter
Instructions
- Preheat oven to 350°F (175°C) and prepare two cookie sheets with parchment paper or nonstick spray.
- In a large mixing bowl, whisk together cake mix and flour. Add softened butter and beat until a dough forms without overmixing.
- Turn dough onto a floured surface and roll to 1/2-inch thickness. Cut out approximately 30 cookies using a 2-inch round cutter.
- Transfer cookies to prepared sheets and bake for 6-10 minutes, until just golden at the edges. Cool for 10 minutes, then transfer to racks.
- In a microwave-safe bowl, combine caramel bits and heavy cream. Microwave for 30 seconds, stir, then heat in 10-second increments until smooth.
- Spoon about 1 teaspoon of caramel onto each cooled cookie and spread into a disc, leaving a rim. Let set for 15-20 minutes.
- Melt chocolate chips and 1/2 tablespoon butter in a microwave, heating for 30 seconds and stirring, then in 10-second intervals until smooth.
- Top each caramel layer with 1 heaping teaspoon of melted chocolate and spread evenly. Allow chocolate to set before serving or storing.
