  • 2 cups flour
  • 2 tsp baking powder
  • 1 1/2 cups granulated sugar

  • 1 tsp cinnamon

  • 1 cup unsalted butter, melted

Instructions

  1. Preheat oven to 400°F (204°C).
  2. Pour the first can of peaches with its juice into a 9×13-inch baking pan. Drain the second can and add just the peaches to the pan.
  3. Stir in 5 tbsp melted butter, 1/8 tsp salt, lemon juice, 1/4 cup sugar, and vanilla extract into the peaches. Mix well.
  4. In a separate bowl, combine flour, 1 1/2 cups sugar, baking powder, cinnamon, nutmeg, and 1/2 tsp salt.
  5. Evenly distribute the dry mixture over the peaches in the pan, covering most of the surface.
  6. Smooth the flour mixture gently with a clean hand or spoon to ensure an even layer.
  7. Drizzle 1 cup melted butter over the top, working from one end to the other.
  8. Bake at 400°F for 15 minutes, then reduce the temperature to 375°F (190°C) and bake for 1 hour, until the top is golden and crisp.

Notes

Canned peaches can be substituted with fresh or frozen peaches (about 8 cups, sweeten to taste). Margarine can replace butter. If using self-rising flour, omit baking powder and salt. Store leftovers covered in the refrigerator up to 4 days; reheat in oven or microwave. For a crispier top, bake uncovered. If the top remains pale, broil briefly, watching closely.
