Ingredients
- 20 corn husks, soaked in warm water
- 2 cups masa harina
- 1/2 cup lard or vegetable shortening
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup warm chicken broth
- 1 1/2 cups pumpkin puree
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1/2 cup golden raisins
- 1/2 cup toasted pumpkin seeds
Instructions
- Beat lard until fluffy, then add masa harina, baking powder, and salt.
- Gradually add warm chicken broth until the dough is spreadable.
- For the filling, mix together pumpkin puree, brown sugar, cinnamon, nutmeg, and cloves.
- Stir in golden raisins and toasted pumpkin seeds.
- Spread about 2 tablespoons of dough onto the smooth side of each corn husk.
- Add 1 tablespoon of the pumpkin filling to the center of each.
- Fold the husk over the filling, then fold the bottom up to secure.
- Stand tamales upright in a steamer and steam for 60-90 minutes.
- Check doneness; the masa should easily pull away from the husk.
- Serve warm.
Notes
You can substitute lard with vegetable shortening for a vegetarian option, and use vegetable broth instead of chicken broth. Make tamales ahead and store in the refrigerator for up to 3 days or freeze for up to a month; re-steam or microwave to reheat. If masa is too dry, add more broth to adjust consistency. For a nut-free version, omit pumpkin seeds. Avoid overfilling to ensure tamales seal properly and cook evenly.
