Description

  • 20 corn husks, soaked in warm water
  • 2 cups masa harina
  • 1/2 cup lard or vegetable shortening
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup warm chicken broth
  • 1 1/2 cups pumpkin puree
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup golden raisins
  • 1/2 cup toasted pumpkin seeds

Instructions

  1. Beat lard until fluffy, then add masa harina, baking powder, and salt.
  2. Gradually add warm chicken broth until the dough is spreadable.
  3. For the filling, mix together pumpkin puree, brown sugar, cinnamon, nutmeg, and cloves.
  4. Stir in golden raisins and toasted pumpkin seeds.
  5. Spread about 2 tablespoons of dough onto the smooth side of each corn husk.
  6. Add 1 tablespoon of the pumpkin filling to the center of each.
  7. Fold the husk over the filling, then fold the bottom up to secure.
  8. Stand tamales upright in a steamer and steam for 60-90 minutes.
  9. Check doneness; the masa should easily pull away from the husk.
  10. Serve warm.

Notes

You can substitute lard with vegetable shortening for a vegetarian option, and use vegetable broth instead of chicken broth. Make tamales ahead and store in the refrigerator for up to 3 days or freeze for up to a month; re-steam or microwave to reheat. If masa is too dry, add more broth to adjust consistency. For a nut-free version, omit pumpkin seeds. Avoid overfilling to ensure tamales seal properly and cook evenly.
