  • 45 medium sweet potatoes, peeled and sliced
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 stick (1/2 cup) unsalted butter

  • 1/2 teaspoon nutmeg
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the sliced sweet potatoes until tender but not mushy, then drain.
  3. In a saucepan, simmer granulated sugar, brown sugar, butter, water, cinnamon, nutmeg, and vanilla extract to make a syrup.
  4. Grease a 9×13-inch baking dish. Layer the boiled sweet potatoes and pour the syrup evenly over them.
  5. Top the dish with the pie crust, brush with melted butter, and sprinkle with sugar if desired.
  6. Bake for 30–35 minutes or until the crust is golden and the cobbler is bubbling.
  7. Allow the cobbler to cool slightly before serving warm.

Notes

You can substitute yams for sweet potatoes for a deeper flavor or use margarine instead of butter for a dairy-free option. To make ahead, assemble the cobbler the day before, refrigerate it, and bake just before serving. Store leftovers in the refrigerator, tightly covered, for up to 3 days and reheat gently. If the syrup seems too runny, let the cobbler cool a bit to thicken, or bake for an additional 5 minutes. For a crispier crust, brush generously with melted butter and sprinkle extra sugar.
