  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 lb pre-cooked Swedish meatballs (store-bought or homemade)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1 cup beef broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  • Cook the egg noodles in salted boiling water until al dente. Drain and set aside.
  • In a large skillet, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until fragrant and translucent, about 3–4 minutes.
  • Add the Swedish meatballs to the skillet and cook until heated through, stirring occasionally, about 5 minutes.
  • Reduce the heat to low and stir in the cream of mushroom soup, sour cream, and beef broth. Mix until the sauce is smooth and well combined. Taste and season with salt and pepper as needed.
  • In a large mixing bowl (or directly in the skillet if it’s big enough), combine the cooked egg noodles with the meatball sauce. Toss gently to coat the noodles evenly.
  • Transfer the mixture to the prepared baking dish and spread it out evenly. Sprinkle the mozzarella and Parmesan cheeses over the top.
  • Bake in the preheated oven for 20–25 minutes, or until the cheese is melted, bubbly, and golden brown.
  • Remove from the oven and let the dish rest for 5 minutes. Garnish with freshly chopped parsley if desired, and serve warm.

Notes

  • Make it Ahead: Assemble the dish up to a day in advance, cover it tightly, and refrigerate. When ready to bake, add 10 extra minutes to the baking time.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) or microwave until warmed through.
  • Freezing: This bake freezes well! Cool the assembled dish completely, wrap it tightly, and freeze for up to 3 months. Thaw overnight in the refrigerator before baking.
