Description

Sugar Cookie Cheesecake Bars combine the buttery sweetness of classic sugar cookies with a rich, creamy cheesecake center. Beginning with a ready-to-use sugar cookie dough, the bottom crust is topped with a luscious blend of cream cheese, vanilla, and egg. Finished with more cookie dough on top, they’re baked to golden perfection and make a crowd-pleasing dessert that’s easy to slice and serve for any occasion.


Ingredients

  • 16.5 ounce tube of sugar cookie dough
  • 1 egg
  • 1 tablespoon vanilla extract
  • 8 ounce box of cream cheese (at room temperature)
  • Optional: Sprinkles
  • Optional: Powdered Sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Spray a baking dish with non-stick spray.
  3. In a mixing bowl, combine the cream cheese, vanilla extract, and egg. Mix on slow speed until smooth. Add 1–2 tablespoons powdered sugar if extra sweetness is desired.
  4. If cream cheese is lumpy, place the bowl in a shallow bath of hot water to bring it to room temperature and make the mixture creamy.
  5. Cut the roll of sugar cookie dough in half.
  6. Press half of the sugar cookie dough evenly into the bottom of the prepared baking dish to form the crust.
  7. Pour the cream cheese mixture over the sugar cookie crust, spreading gently to cover.
  8. Take the remaining half of the cookie dough, create flattened chunks, and place them evenly on top of the cheesecake layer.
  9. Bake for 30 minutes, or until the top is golden brown. Watch closely towards the end as sugar cookies can burn quickly.
  10. Remove from oven and let cool for at least 1 hour.
  11. Once completely cooled, add sprinkles if desired.
  12. Cut into squares and serve.

Notes

For a gluten-free version, use gluten-free sugar cookie dough. Dairy-free cream cheese substitutes can also be used for lactose intolerance. These bars can be made a day in advance and stored covered in the refrigerator for up to 4 days; best served chilled or at room temperature. If the cream cheese mixture is lumpy, warm it gently to smooth it out. To avoid burning, watch closely; remove from the oven once golden. Let bars cool completely for neat slices.
