Description

  • 1/2 cup powdered sugar
  • 1 cup fresh strawberries, sliced
  • 2 tablespoons butter (for crumbs)
  • 1 1/2 cups crushed graham crackers or vanilla wafers
  • Additional fresh strawberries, for topping

Instructions

  1. In a medium bowl, combine the softened cream cheese and powdered sugar until smooth and creamy.
  2. Gently fold in the sliced strawberries, distributing them throughout the mixture.
  3. Lay out sheets of graham crackers or vanilla wafers on a clean surface.
  4. Spread the cheesecake mixture evenly over the crackers or wafers.
  5. Carefully roll each cracker or wafer sheet tightly into a log, then place seam-side down.
  6. Refrigerate the rolls for at least 1 hour to allow them to set.

Notes

For a lighter version, substitute low-fat cream cheese. If strawberries are out of season, use thawed frozen berries. Wafer cookies can be swapped for gluten-free alternates. Rolls may be made a day ahead and refrigerated, covered in plastic wrap. Store leftovers in an airtight container for up to 2 days. If rolls become too soft to slice, freeze briefly to firm. If filling leaks, add a touch more powdered sugar for stability.
