Ingredients
- 8 oz full-fat cream cheese, softened
- 1/2 cup powdered sugar
- 1 cup fresh strawberries, sliced
- 2 tablespoons butter (for crumbs)
- 1 1/2 cups crushed graham crackers or vanilla wafers
- Additional fresh strawberries, for topping
Instructions
- In a medium bowl, combine the softened cream cheese and powdered sugar until smooth and creamy.
- Gently fold in the sliced strawberries, distributing them throughout the mixture.
- Lay out sheets of graham crackers or vanilla wafers on a clean surface.
- Spread the cheesecake mixture evenly over the crackers or wafers.
- Carefully roll each cracker or wafer sheet tightly into a log, then place seam-side down.
- Refrigerate the rolls for at least 1 hour to allow them to set.
- Once chilled, slice the rolls and serve cold, garnished with additional fresh strawberries on top.
Notes
For a lighter version, substitute low-fat cream cheese. If strawberries are out of season, use thawed frozen berries. Wafer cookies can be swapped for gluten-free alternates. Rolls may be made a day ahead and refrigerated, covered in plastic wrap. Store leftovers in an airtight container for up to 2 days. If rolls become too soft to slice, freeze briefly to firm. If filling leaks, add a touch more powdered sugar for stability.
