  • 1 box strawberry cake mix
  • 1/2 cup melted butter
  • 2 eggs
  • 2 tablespoons strawberry gelatin
  • 8 oz cream cheese, room temperature
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar
  • 2 to 3 tablespoons heavy cream
  • 1 sleeve Golden Oreos
  • remaining strawberry gelatin
  • 2 tablespoons melted butter

Instructions

  1. Preheat the oven to 350°F. Line an 8×8-inch glass baking dish with parchment paper.
  2. In a medium bowl, mix together the strawberry cake mix, 1/2 cup melted butter, eggs, and 2 tablespoons of strawberry gelatin until well combined.
  3. Use a rubber spatula to spread the batter into the prepared baking dish. Bake for 25 minutes.
  4. In a mixing bowl, beat together cream cheese, 1/2 cup softened butter, and vanilla extract until combined using an electric mixer.
  5. Add the powdered sugar and heavy cream. Beat until the frosting is smooth and fluffy.
  6. Spread the cream cheese frosting over the cooled brownies.
  7. Place the Golden Oreos in a food processor and pulse until broken into pieces.
  8. Sprinkle the remaining strawberry gelatin over the Oreo crumbs. Drizzle with 2 tablespoons melted butter, then pulse a few more times to combine.
  9. Sprinkle the cookie crumbles over the frosted brownies, pressing them down gently into the frosting.
  10. Cut the brownies into squares and serve.

Notes

Substitute any strawberry cake mix or use vanilla mix with extra gelatin for flavor. For gluten-free, use GF cake mix and cookies. Make brownies a day ahead and store in an airtight container in the fridge for up to 4 days; freeze un-frosted brownies for up to 2 months. If brownies turn out dense or dry, slightly underbake or add an extra tablespoon of butter. Let brownies cool completely before frosting to prevent melting.
