Description

Strawberry Crunch Cheesecake Bites deliver a rich, creamy cheesecake center encased in a strawberry-flavored crunchy coating. Whipped cream is carefully folded into sweetened cream cheese for a light, irresistibly smooth filling. Each bite is shaped, chilled, and finished with a crispy layer of crushed golden Oreos and strawberry gelatin, creating a delightful texture contrast. Perfect for easy make-ahead treats.

Ingredients

Scale
  • 4 oz cream cheese, softened
  • ½ teaspoon vanilla extract
  • ¼ cup heavy whipping cream
  • 2 tablespoons powdered sugar (optional, for a sweeter finish)
  • 810 golden Oreos, crushed
  • 1 tablespoon strawberry gelatin powder
  • 1 tablespoon melted butter

Instructions

  1. In a small bowl, combine crushed golden Oreos and strawberry gelatin powder. Stir in melted butter until the mixture is crumbly and resembles a crunchy topping. Set aside.
  2. In a mixing bowl, beat the softened cream cheese until smooth. Add vanilla extract and powdered sugar (if using) and mix well.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
  4. Scoop the cheesecake mixture using a small cookie scoop or spoon and roll into 1-inch balls. Place on a parchment-lined tray and freeze for 20–30 minutes until firm.
  5. Roll each chilled cheesecake ball in the strawberry crunch topping, gently pressing the coating onto the surface.
  6. Serve immediately or refrigerate in an airtight container for up to 3 days.

Notes

For substitutions, use graham crackers or vanilla wafers instead of golden Oreos and any berry-flavored gelatin for strawberry. Try mascarpone for a tangy twist. Make-ahead: Prepare bites, freeze up to 1 week, then coat before serving. Store in an airtight container for up to 3 days. If mixture is too soft to roll, chill longer. Crunch coating should be crumbly; add more melted butter if too dry.
