Description
Strawberry Cream Cheese Pie is a showstopping dessert featuring a buttery graham cracker crust, luxuriously smooth cream cheese filling, and a vibrant strawberry topping. Made with fresh strawberries, this pie combines a lightly sweetened glaze with a rich, whipped filling for a refreshing treat. Perfectly chilled, it presents a balanced contrast of creamy, fruity, and crunchy textures ideal for gatherings or summer occasions.
Ingredients
- 1 9-inch graham cracker crust
- 5 cups fresh strawberries, tops removed and sliced into fourths, divided
- ½ cup granulated sugar
- 1 ½ tablespoons cornstarch
- 3 teaspoons fresh lemon juice
- 8 ounces cream cheese, softened to room temperature
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
Instructions
- In a small saucepan, combine 2 cups of strawberries, granulated sugar, cornstarch, and lemon juice. Place on medium-low heat and stir until strawberries release juice. Mash with a spoon or potato masher.
- Increase heat to medium-high and bring mixture to a boil while stirring consistently. Boil for 1 minute, then remove from heat and set aside to cool.
- In a mixing bowl, beat softened cream cheese until smooth. Add powdered sugar and vanilla extract, and mix until combined. In a separate bowl, beat heavy cream until stiff peaks form. Gently fold whipped cream into cream cheese mixture until fully incorporated.
- Pour the cream cheese filling into the graham cracker crust and spread evenly. Set aside.
- Mix the remaining 3 cups of fresh strawberries with the cooled strawberry glaze until fully coated. Spread topping evenly over cream cheese layer.
- Cover pie and refrigerate for at least 4 hours. Serve chilled.
Notes
For the crust, a homemade graham cracker base or even a pre-baked pie shell can be used. Swap strawberries for raspberries or use frozen berries (thaw and drain first) if fresh aren’t available. To make ahead, the pie can be assembled and refrigerated up to 24 hours in advance. Store leftovers tightly covered in the fridge for 2-3 days. If topping is runny, be sure the glaze is fully cooled before assembling, or add a little extra cornstarch if needed for thickness.
