  • 8 oz wide rice noodles
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb ground beef
  • 4 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp chili garlic sauce (adjust to taste)
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • 1 tsp cornstarch (optional, mixed with 2 tbsp water)
  • 2 green onions, chopped

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add ground beef and cook until browned, breaking it apart. Push to the side of the skillet.
  3. Add shrimp to the skillet. Cook until pink and fully done, about 2 minutes per side. Remove shrimp and set aside.
  4. Add the remaining oil. Stir in garlic and ginger, sautéing for 1–2 minutes until fragrant.
  5. Add soy sauce, oyster sauce, hoisin sauce, chili garlic sauce, and sesame oil. For a thicker sauce, add the cornstarch slurry and cook until thickened.
  6. Add cooked noodles, mixing until they are evenly coated in the sauce.
  7. Return shrimp to the pan. Stir everything together for 2–3 minutes until well combined and heated through.
  8. Top with green onions and serve hot.

Notes

Substitute shrimp or beef with tofu or chicken for dietary needs; use gluten-free soy sauce for a gluten-free version. Prepare noodles and chop ingredients ahead for faster assembly. Store leftovers in an airtight container in the fridge for up to 2 days; reheat gently to avoid overcooking shrimp. If sauce is too thin, add more cornstarch slurry; if too thick, add a splash of water or broth.
