- Place butter in a 9×13-inch baking dish and melt it in the oven.
- In a bowl, mix self-rising flour, 3/4 cup sugar, whole milk, vanilla, and a pinch of salt to make the batter.
- Pour the batter evenly over melted butter in the baking dish without stirring.
- In another bowl, toss sliced peaches with the remaining 1/4 cup sugar and cinnamon.
- Gently spoon the peach mixture over the batter without stirring.
- Bake for 45-50 minutes until the cobbler is golden brown and bubbly.
- Serve warm, ideally with a scoop of vanilla ice cream.
Notes
Substitute canned or frozen peaches if fresh are unavailable; adjust sugar for sweetness preference. Make ahead by preparing components separately, then assemble and bake before serving. Store leftovers covered in the refrigerator for up to 3 days; reheat before serving. For a crispier topping, let the cobbler rest uncovered after baking. If the center remains underbaked, cover loosely with foil and extend bake time slightly.
