  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp fresh parsley, chopped (optional, for garnish)
  • Grated Parmesan cheese (optional, for garnish)

Instructions

  1. Season the beef cubes with salt, black pepper, garlic powder, and smoked paprika.
  2. Optional: Sear the seasoned beef cubes in batches in hot olive oil for 1 to 2 minutes per side for enhanced flavor.
  3. In a separate bowl, toss the potatoes with olive oil, salt, and black pepper.
  4. In a mixing bowl, whisk together melted butter, minced garlic, thyme, rosemary, beef broth, and Worcestershire sauce to make the garlic butter sauce.
  5. Place the seasoned potatoes in the bottom of the slow cooker.
  6. Layer the seasoned beef cubes on top of the potatoes.
  7. Pour the garlic butter sauce evenly over the beef and potatoes.
  8. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the beef is tender.
  9. Garnish with fresh parsley and, if desired, grated Parmesan cheese before serving.

Notes

For a leaner dish, substitute sirloin or even chicken cubes instead of chuck roast. You can swap Yukon Gold potatoes with red potatoes or even sweet potatoes. Prep in advance and refrigerate ingredients overnight for a quicker start in the morning. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for 2 months. If sauce separates, whisk before serving. Overcooked beef turns stringy; check doneness early.
