Instructions
- Place the chicken breasts in the bottom of the slow cooker. Add the sliced bell peppers and onion on top.
- Sprinkle garlic powder, onion powder, smoked paprika, Italian seasoning, salt, and pepper evenly over the chicken and vegetables.
- Cover and cook on low for 6–7 hours or high for 3–4 hours until the chicken reaches an internal temperature of 165°F.
- Shred the chicken directly in the slow cooker using two forks. Mix well with the vegetables and juices.
- Preheat your oven’s broiler. Load the shredded chicken and vegetable mixture onto hoagie rolls. Top with cheese slices and broil for 1–2 minutes, until the cheese melts and bubbles.
- Serve immediately, adding mayonnaise or mustard if desired.
