  • 2 lbs boneless, skinless chicken breasts
  • 2 green bell peppers, sliced
  • 1 large onion, sliced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp dried Italian seasoning
  • Salt and pepper, to taste

Optional Additions for Serving:

  • Hoagie rolls
  • Provolone or mozzarella cheese slices
  • Mayonnaise or mustard (optional)

Instructions

  • Place the chicken breasts in the bottom of the slow cooker. Add the sliced bell peppers and onion on top.
  • Sprinkle garlic powder, onion powder, smoked paprika, Italian seasoning, salt, and pepper evenly over the chicken and vegetables.
  • Cover and cook on low for 6–7 hours or high for 3–4 hours until the chicken reaches an internal temperature of 165°F.
  • Shred the chicken directly in the slow cooker using two forks. Mix well with the vegetables and juices.
  • Preheat your oven’s broiler. Load the shredded chicken and vegetable mixture onto hoagie rolls. Top with cheese slices and broil for 1–2 minutes, until the cheese melts and bubbles.
  • Serve immediately, adding mayonnaise or mustard if desired.
