Ingredients
- 8 oz cream cheese (room temperature)
- 1 packet dry ranch dressing mix
- 1 (15 oz) can corn, drained
- 1 small can black olives, diced
- 1 cup red bell pepper, finely diced
- 4 oz green chilis, drained (optional)
- 1 whole jalapeño, diced (optional for heat)
Instructions
- In a bowl, mix cream cheese with dry ranch dressing mix until smooth.
- Add drained corn, diced black olives, red bell pepper, and green chilis. Stir well to combine.
- If desired, add finely chopped jalapeño for heat.
- Serve immediately or chill in the fridge for at least 30 minutes to let flavors meld.
- Serve with tortilla chips, crackers, or fresh vegetables.
Notes
Substitute Greek yogurt or reduced-fat sour cream for cream cheese for a lighter version. Use frozen or roasted corn for a flavor twist. Store covered in the fridge for up to 3 days; stir before serving if any water separates. If the dip is too thick, add 1-2 tablespoons of milk or yogurt. If it’s too salty, use a low-sodium ranch mix. For less heat, omit the jalapeño, or for variety, add diced tomatoes, green onions, or shredded cheese.
