  • 1 small can black olives, diced
  • 1 cup red bell pepper, finely diced
  • 4 oz green chilis, drained (optional)
  • 1 whole jalapeño, diced (optional for heat)

Instructions

  1. In a bowl, mix cream cheese with dry ranch dressing mix until smooth.
  2. Add drained corn, diced black olives, red bell pepper, and green chilis. Stir well to combine.
  3. If desired, add finely chopped jalapeño for heat.
  4. Serve immediately or chill in the fridge for at least 30 minutes to let flavors meld.

Notes

Substitute Greek yogurt or reduced-fat sour cream for cream cheese for a lighter version. Use frozen or roasted corn for a flavor twist. Store covered in the fridge for up to 3 days; stir before serving if any water separates. If the dip is too thick, add 1-2 tablespoons of milk or yogurt. If it’s too salty, use a low-sodium ranch mix. For less heat, omit the jalapeño, or for variety, add diced tomatoes, green onions, or shredded cheese.
