Ingredients
- 1 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 package (3.4 oz) pumpkin spice instant pudding mix, dry
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon pumpkin pie spice
- 2 cups white chocolate chips
Instructions
- Preheat oven to 350°F (177°C). Line a baking sheet with parchment paper.
- Beat softened butter with brown sugar and granulated sugar until light and creamy.
- Add pudding mix, vanilla extract, and eggs; mix until well combined and smooth.
- In a separate bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
- Gradually add the dry ingredients to the wet mixture, mixing just until incorporated.
- Fold in the white chocolate chips.
- Drop rounded scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Press a few extra white chocolate chips on top of each dough ball if desired.
- Bake for 8–9 minutes, or until edges are lightly browned but centers look soft.
- Cool on the baking sheet for 2 minutes, then transfer cookies to a wire rack to cool completely.
Notes
For substitutions, use butterscotch or vanilla pudding if pumpkin spice isn’t available. White chocolate chips can be replaced with semi-sweet, milk chocolate, or cinnamon chips. Dough can be made 2 days ahead and chilled; chilled dough may need one extra minute in the oven. Store cookies in an airtight container for up to 5 days, or freeze for up to 3 months. If cookies spread too much, chill dough before baking. If too dense, don’t over-mix. For chewier cookies, slightly underbake.
