Ingredients
- 1/2 cup unsalted butter
- 1/2 cup heavy cream
- 1 cup firmly packed light brown sugar
- 4 tablespoons light corn syrup
- Pinch of salt
- 1 cup coarsely chopped pecans
- 2 (17.5-ounce) cans refrigerated cinnamon rolls (5 per can, such as Pillsbury Grands Flaky Cinnamon Rolls)
Instructions
- Preheat oven to 350°F. Spray a 9×13-inch glass or ceramic baking dish with nonstick spray.
- In a small pot over medium heat, combine butter, heavy cream, brown sugar, corn syrup, and a pinch of salt. Stir until butter melts. Bring to a brief boil to dissolve sugar.
- Pour caramel mixture into prepared dish. Sprinkle chopped pecans evenly over the caramel.
- Open the cans of cinnamon rolls and set aside the included icing. Arrange the rolls in the dish on top of the caramel and pecans. It’s fine if there are gaps; rolls will expand.
- Bake for 25–30 minutes or until golden brown. Let rest for 5 minutes.
- Place a large serving platter over the dish and carefully invert the rolls onto the platter (caramel will be hot; use a dish towel to protect your hands).
- Drizzle the cinnamon rolls with reserved icing, if desired. Serve warm.
Notes
For nut-free rolls, omit pecans or use chopped walnuts. Substitute light corn syrup with maple syrup or honey for a richer flavor. Rolls can be assembled the night before (refrigerate unbaked and bake in the morning). Store leftovers in an airtight container for up to 2 days, reheating gently. If caramel is too runny, boil sauce a minute longer; if too stiff, add extra cream. Take care when inverting to avoid burns.
