Description

  • 15 oz salmon flakes (or 3 cans of 5-oz canned salmon, drained and flaked)
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 1 egg, lightly beaten
  • 1/4 cup mayonnaise
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup cilantro, chopped
  • 1 tablespoon olive oil
  • Avocado oil for frying

Instructions

  1. Flake salmon gently, removing any skin and bones if using canned.
  2. In a large bowl, whisk together panko, flour, garlic powder, salt, and pepper.
  3. In another bowl, combine salmon, mayonnaise, Worcestershire sauce, bell peppers, cilantro, olive oil, and beaten egg.
  4. Gently fold the wet mixture into the dry ingredients until just combined.
  5. Chill the mixture for 15-20 minutes (optional but helpful for shaping).
  6. With wet hands, shape into uniform balls or patties.
  7. Heat avocado oil in a skillet to 350°F. Fry croquettes for 2-3 minutes per side until golden brown.
  8. For a lighter alternative, bake at 400°F for 10-12 minutes per side.
  9. Drain on paper towels after cooking and serve warm.

Notes

You can use fresh or canned salmon; tuna is also a good substitute. For a gluten-free version, try almond flour and gluten-free panko. Croquettes can be made ahead—just shape and refrigerate up to 1 day prior to cooking. Store leftovers in an airtight container for up to 3 days or freeze for 1 month. If patties don’t hold, add a bit more breadcrumb; if too dry, more mayo. Always drain on paper towels for crispiness.
