A delicious, hearty bake combining the classic flavors of the Reuben sandwich into a comforting layered dish with corned beef, sauerkraut, Swiss cheese, and a creamy white sauce.

- 1 lb sliced corned beef or turkey corned beef
- 2 cups sauerkraut (drained)
- 1.5 cups shredded Swiss cheese
- 12 pieces lasagna noodles (or slices of rye bread)
- 1 cup Thousand Island dressing
- 0.5 cup sour cream
- 2 tbsp butter
- 1 tbsp all-purpose flour
- 1.5 cups milk
- Fresh parsley for garnish
Instructions
1. Boil lasagna noodles in salted water until al dente. Drain and set aside.
2. Melt butter in a saucepan over medium heat. Stir in flour and cook for 1 minute.
3. Gradually whisk in milk, cooking until thickened. Remove from heat and stir in ½ cup shredded Swiss cheese.
4. In a small bowl, combine Thousand Island dressing and sour cream.
5. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
6. Spread a thin layer of the white sauce in the baking dish, followed by layers of noodles, corned beef, sauerkraut, Swiss cheese, and dressing mix. Repeat layers, ending with cheese on top.
7. Bake for 25-30 minutes until bubbly and golden.
8. Garnish with fresh parsley before serving.
Notes
For a lighter version, substitute corned beef with turkey corned beef. Use rye bread for traditional Reuben flavors.
