- 0.5 cup sour cream
- 0.67 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Swirl
- 0.33 cup seedless raspberry jam
Instructions
- Preheat oven to 325°F (163°C). Line an 8-inch square baking pan with parchment paper.
- In a bowl, mix graham cracker crumbs, 1/3 cup sugar, and melted butter. Press into the bottom of the prepared pan.
- In a separate bowl, beat cream cheese, sour cream, and 2/3 cup sugar until smooth.
- Add eggs one at a time, then mix in the vanilla extract.
- Pour the cream cheese mixture over the crust in the pan.
- Warm the raspberry jam in the microwave until slightly runny.
- Drop spoonfuls of jam onto the cream cheese mixture and swirl with a knife.
- Bake for 40-45 minutes until the edges are set but the center is slightly jiggly.
- Let cool at room temperature, then refrigerate for at least 3 hours before cutting into bars.
