  • 1.5 cups graham cracker crumbs

Filling

  • 16 oz cream cheese (softened)
  • 0.5 cup sour cream
  • 0.67 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Swirl

  • 0.33 cup seedless raspberry jam

Instructions

  1. Preheat oven to 325°F (163°C). Line an 8-inch square baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, 1/3 cup sugar, and melted butter. Press into the bottom of the prepared pan.
  3. In a separate bowl, beat cream cheese, sour cream, and 2/3 cup sugar until smooth.
  4. Add eggs one at a time, then mix in the vanilla extract.
  5. Pour the cream cheese mixture over the crust in the pan.
  6. Warm the raspberry jam in the microwave until slightly runny.
  7. Drop spoonfuls of jam onto the cream cheese mixture and swirl with a knife.
  8. Bake for 40-45 minutes until the edges are set but the center is slightly jiggly.
  9. Let cool at room temperature, then refrigerate for at least 3 hours before cutting into bars.
