  • 1/2 cup heavy cream
  • 1 pint fresh raspberries

Instructions

  1. In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar until moistened.
  2. Press the mixture firmly into the bottoms of mini muffin tin cups or silicone molds to form a crust. Refrigerate for 15 minutes.
  3. Using a hand mixer, whip softened cream cheese with powdered sugar and vanilla extract until smooth and fluffy.
  4. In a separate bowl, whip heavy cream to stiff peaks. Fold the whipped cream into the cream cheese mixture until well combined.
  5. Pipe or spoon the cream cheese filling over the chilled graham cracker crusts.
  6. Place a fresh raspberry on top of each cream cheese bite.
  7. Chill the bites for at least 1 hour until firm. Gently remove from the molds and serve cold.

Notes

Substitute graham crackers with digestive biscuits or gluten-free cookies if desired. For a different taste, substitute raspberries with blueberries, strawberries, or blackberries. The bites can be made up to 2 days ahead and stored in an airtight container in the refrigerator. If cream cheese feels dense, make sure it is fully softened before whipping. If crust crumbles, increase the melted butter slightly until mixture holds together.
