Instructions

  1. Preheat oven to 350 degrees F (175 C).
  2. In a medium bowl, mix together flour, baking powder, salt, 3/4 cup granulated sugar, cinnamon, nutmeg, and cloves.
  3. In a small bowl, whisk pumpkin puree, milk, melted butter (or oil), and vanilla until blended. Pour into dry ingredients and stir to make a thick batter.
  4. Spread batter evenly in an 8-inch casserole dish with high sides.
  5. Combine 1/2 cup granulated sugar, 1/2 cup brown sugar, and chopped pecans; sprinkle over batter.
  6. Pour 1 1/2 cups very hot water evenly over the dish, without stirring.
  7. Bake for 40 minutes or until the center is just set.
  8. Cool for 5-10 minutes before serving. Serve warm, topped with extra pecans and vanilla ice cream if desired.

Notes

For substitutions, you may use whole wheat flour for extra fiber, or swap melted butter for vegetable oil or coconut oil for a dairy-free version. Substitute walnuts for pecans if desired. Make the batter up to a day ahead and refrigerate; assemble topping and bake just before serving. Leftovers keep covered in the fridge for up to 3 days; reheat before serving. If the cobbler is too runny, bake an extra 5-10 minutes. For a firmer topping, reduce hot water by 1/4 cup. Don’t overmix the batter for the lightest texture.
