Description

  • 1/4 cup sugar
  • 1 1/2 teaspoons cinnamon
  • Butter, for skillet

Instructions

  1. Set a large non-stick skillet over medium heat and melt a small amount of butter.
  2. In a small rectangular baking dish, whisk together eggs, milk, pumpkin puree, vanilla extract, 1 teaspoon cinnamon, and pumpkin pie spice.
  3. Dip each bread stick into the mixture, ensuring all sides are coated, then place on the hot skillet.
  4. Cook until golden brown on each side, about 2 minutes per side.
  5. Meanwhile, combine sugar and 1 1/2 teaspoons cinnamon in a separate small baking dish.
  6. Remove finished sticks from the skillet and immediately roll in the cinnamon sugar mixture.
  7. Serve hot with maple syrup or buttered pecan syrup.

Notes

For best results, day-old bread works well, as it absorbs the batter without getting soggy. Substitute gluten-free bread for a gluten-free version, or almond milk for dairy-free needs. Prepare the batter in advance, but dip and fry fresh for best texture. Store leftovers in an airtight container in the fridge for up to 2 days; reheat in the oven to retain crispness. If your sticks turn soggy, your skillet may be too cool or bread too fresh.
