Ingredients
- 1/4 cup canned pumpkin puree
- 4 tbsp butter, softened
- 12 slices brioche bread
- 2 large eggs
- 1 1/3 cups eggnog
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1 pinch nutmeg
- 1 can (15 oz) pure pumpkin
- 2 tbsp unsalted butter, for griddle
- 1/2 cup unsalted butter, for batches
- 1/4 cup maple syrup
- Powdered sugar (optional)
Instructions
- In a small bowl, mix 1/4 cup pumpkin puree with 4 tbsp softened butter; refrigerate pumpkin butter 30 minutes.
- In a shallow dish, whisk together eggs, eggnog, cinnamon, vanilla, salt, nutmeg, and remaining pumpkin until smooth.
- Heat 2 tbsp butter on a griddle over medium-high heat.
- Dip each brioche slice into the egg mixture, thoroughly coating both sides.
- Cook slices on the griddle for 6 minutes each, turning once, until golden brown. Add more butter for each new batch.
- Serve French toast warm with pumpkin butter, maple syrup, and a sprinkle of powdered sugar if desired.
Notes
For a dairy-free version, substitute plant-based eggnog and use vegan butter. Stale or day-old brioche works best as it soaks up the custard without becoming soggy. To make ahead, prepare the pumpkin butter and custard the night before. Store cooked French toast in the fridge for up to three days; reheat on the griddle to restore crispiness. If toast turns soggy, reduce soak time. Overly browned toast may mean the griddle is too hot—lower the heat as needed.
