- 1 cup canned pumpkin (not pumpkin pie filling)
- 1/4 cup vegetable oil

- 1/2 teaspoon ground cinnamon (for topping)
- 1 ½ cups hot water (for topping)
Instructions
- Preheat oven to 350°F and spray a 9×13-inch baking dish with nonstick spray.
- Whisk together flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, cloves, and ginger in a large bowl.
- Add canned pumpkin, vegetable oil, and vanilla to the dry ingredients; stir until just combined.
- Spread the batter evenly into the prepared baking dish.
- In a small bowl, whisk together brown sugar and ground cinnamon for the topping. Sprinkle this mixture evenly over the batter.
- Gently pour 1 ½ cups hot water over the top. Do not stir.
- Bake uncovered for 50-55 minutes, or until the cake layer rises to the top and the cobbler is golden.
- Allow to stand for 5-10 minutes to set before serving.
- Serve warm, ideally with a scoop of vanilla ice cream.
Notes
For substitutions, use melted butter or coconut oil instead of vegetable oil, or replace canned pumpkin with cooked mashed sweet potato. Make ahead by assembling the batter and topping separately; store covered in the fridge for up to one day and add hot water just before baking. Store leftovers covered in the refrigerator for 2-3 days. If cobbler appears runny, bake an extra 5-10 minutes. For firmer texture, use less hot water. Reheat before serving.
