Ingredients

- ½ cup canned pumpkin puree

- ½ cup cinnamon sugar for topping
- 1 cup powdered sugar
- 2–3 tablespoons milk (for icing)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and pumpkin pie spice.
- In a large bowl, cream together softened butter and granulated sugar until light and fluffy (3-4 minutes). Add pumpkin puree, egg, and vanilla extract. Beat until well combined.
- Gradually add dry ingredients to wet mixture, mixing until a soft dough forms. Do not overmix.
- Roll dough into balls, about 1 to 1 ½ inches in diameter, and place on prepared baking sheet. Gently flatten each dough ball.
- Sprinkle each cookie with brown sugar and cinnamon sugar topping generously.
- Bake for 10-12 minutes or until edges are lightly browned and tops are set. Do not overbake.
- While cookies cool, prepare icing: Mix powdered sugar with 2-3 tablespoons milk until smooth and drizzle-ready.
- Once cookies have cooled completely, drizzle icing over the top.
Notes
For ingredient substitutions, use coconut oil or margarine instead of butter, and maple syrup or honey for granulated sugar. These cookies can be made ahead and stored in an airtight container for up to a week or frozen for longer storage. If your dough is too sticky, chill it in the refrigerator for 30 minutes.
