Instructions

  1. Preheat oven to 375°F (190°C) and line a 12-cup muffin tin.
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In a large bowl, whisk pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, milk, and vanilla until smooth.
  4. Add the dry ingredients to the wet and stir just until combined.
  5. Fold in the mini chocolate chips, reserving some for topping.
  6. Fill muffin cups two-thirds full with batter.
  7. Sprinkle reserved chocolate chips on top of muffins.
  8. Bake for 18 to 20 minutes, until golden and a toothpick comes out clean.
  9. Let muffins cool in the pan for 5 minutes before removing to a wire rack.

Notes

For a lighter version, substitute half the oil with unsweetened applesauce. Dairy-free milk works in place of regular milk. Use dark chocolate or white chocolate chips for variety. Store muffins in an airtight container at room temperature for up to 3 days or freeze for up to 2 months. Avoid overmixing for the fluffiest texture. If muffins sink, check baking powder’s freshness and ensure correct oven temperature.
