Ingredients
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda

- 1 1/2 cups granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 can (15 oz) pumpkin puree

- 1/2 cup chopped pecans (optional)
Instructions
- Preheat oven to 350°F. Grease two 8×4 loaf pans or one 9×5 loaf pan.
- In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
- In a large bowl, beat together sugar, vegetable oil, and eggs until well combined.
- Mix in the pumpkin puree and water until smooth.
- Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
- If desired, fold in the mini chocolate chips and chopped pecans.
- Divide the batter evenly between the prepared pans.
- Bake for 50-60 minutes for two small pans or 65-75 minutes for one large pan, or until a toothpick inserted into the center comes out clean.
- Let cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.

Substitute whole wheat or gluten-free flour for a healthier or allergy-friendly version; swap vegetable oil with melted coconut oil or unsweetened applesauce to reduce fat.
