Ingredients

  • 1⅔ cup all-purpose flour
  • 1¼ cup granulated sugar
  • 1 cup pumpkin puree
  • ½ cup softened unsalted butter
  • ½ cup warm milk
  • 2 large eggs
  • 2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon nutmeg
  • ¼ teaspoon kosher salt

Instructions

  1. Preheat oven to 350°F.
  2. Grease and flour a loaf pan.
  3. In a bowl, whisk together flour, ground cinnamon, nutmeg, kosher salt, baking powder, and baking soda.
  4. In another bowl, cream the softened unsalted butter and granulated sugar until fluffy, about 2 minutes.
  5. Add eggs to the butter mixture and mix well.
  6. Add pumpkin puree and vanilla extract, mixing until incorporated.
  7. Gently fold in the dry ingredients by hand until just combined.
  8. Add the warm milk and mix until smooth with no lumps.
  9. Pour the batter evenly into the prepared loaf pan.
  10. Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
  11. Cool the bread in the pan for 15 minutes before removing to a wire rack to finish cooling.

Notes

Substitute up to half the flour with whole wheat for a heartier texture, or use brown sugar for added depth. For dairy-free bread, use plant-based milk and vegan butter. Store cooled bread in an airtight container for up to 3 days at room temperature or freeze slices for up to 2 months. If bread is too dense, mix the wet and dry ingredients lightly. Overmixing causes toughness. If your loaf sinks, ensure baking powder and soda are fresh. To make ahead, bake and freeze, then thaw at room temperature before serving.
