- 1 cup white sugar
- ½ cup packed light brown sugar
- ½ cup oil
- 1 (15-ounce) can pumpkin puree (about 1 ¾ cups)
- 2 large eggs
- 2 teaspoons vanilla extract
Instructions
- Preheat oven to 350°F and position the rack in the lower-middle slot. Grease a 9×5-inch loaf pan and line the bottom with parchment paper.
- In a medium bowl, whisk together flour, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt.
- In a large bowl, whisk pumpkin puree, white sugar, and brown sugar until smooth. Add eggs, oil, and vanilla, mixing until well combined.
- Gradually add dry ingredients to the wet mixture, whisking until the batter is smooth and no dry flour remains.
- Pour batter into prepared pan and smooth the top. Bake for 60–75 minutes, loosely covering with foil halfway through.
- Check doneness by inserting a toothpick in the center—bread is ready when it comes out clean.
- Cool loaf in pan for 10 minutes. Use a knife to loosen edges, then invert onto a wire rack to cool completely.
Notes
Substitute half of the oil with applesauce for lighter bread, or use whole wheat flour for extra fiber. For a dairy-free version, use any neutral plant-based oil. Pumpkin Bread can be made ahead and stays moist for up to four days when stored in an airtight container at room temperature; freeze slices for up to three months. If the bread sinks, check oven temperature or doneness before removing. Too-dense bread may indicate overmixing.
