Description

Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup white sugar
  • ½ cup packed light brown sugar
  • ½ cup oil
  • 1 (15-ounce) can pumpkin puree (about 1 ¾ cups)
  • 2 large eggs
  • 2 teaspoons vanilla extract


Instructions

  1. Preheat oven to 350°F and position the rack in the lower-middle slot. Grease a 9×5-inch loaf pan and line the bottom with parchment paper.
  2. In a medium bowl, whisk together flour, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt.
  3. In a large bowl, whisk pumpkin puree, white sugar, and brown sugar until smooth. Add eggs, oil, and vanilla, mixing until well combined.
  4. Gradually add dry ingredients to the wet mixture, whisking until the batter is smooth and no dry flour remains.
  5. Pour batter into prepared pan and smooth the top. Bake for 60–75 minutes, loosely covering with foil halfway through.
  6. Check doneness by inserting a toothpick in the center—bread is ready when it comes out clean.
  7. Cool loaf in pan for 10 minutes. Use a knife to loosen edges, then invert onto a wire rack to cool completely.

Notes

Substitute half of the oil with applesauce for lighter bread, or use whole wheat flour for extra fiber. For a dairy-free version, use any neutral plant-based oil. Pumpkin Bread can be made ahead and stays moist for up to four days when stored in an airtight container at room temperature; freeze slices for up to three months. If the bread sinks, check oven temperature or doneness before removing. Too-dense bread may indicate overmixing.
