  • 12 large eggs
  • 1/3 cup mayonnaise
  • 1 1/2 tbsp chili garlic sauce
  • Smoked paprika, for garnish
  • Crispy fried onions, for topping

Instructions

  1. Place eggs in a large pot and cover with cold water.
  2. Bring the water to a boil, then simmer the eggs for 10 minutes.
  3. Transfer the eggs to an ice bath to stop the cooking process.
  4. Peel the eggs and slice them in half lengthwise.
  5. Scoop out the yolks and place them in a mixing bowl.
  6. Mash the yolks with mayonnaise and chili garlic sauce until smooth.
  7. Taste and adjust the spice level as desired.
  8. Spoon or pipe the mixture back into the egg whites.
  9. Sprinkle with smoked paprika.
  10. Top with crispy fried onions.
  11. Serve immediately or refrigerate until ready to serve.

Notes

For substitutions, Greek yogurt can replace mayonnaise for a lighter option, and sriracha can be used instead of chili garlic sauce for a different flavor. Prepare deviled eggs a day ahead, store covered in the refrigerator for up to 2 days, and top with onions just before serving. If yolk filling is too thin, add extra egg yolks or a bit more mayonnaise. Overcooking eggs can cause a green yolk; cool eggs immediately to avoid this.
