- 1 pound boneless, skinless chicken breasts (thinly sliced)
Base
- 1 tablespoon olive oil

- 1/2 onion chopped
Fruit
- 1 can (15 oz) pineapple chunks (drained)
Sauce
- 1/4 cup soy sauce
- 1/4 cup honey
- 1/4 cup rice vinegar
- 1 clove garlic (minced)
- 1/4 teaspoon red pepper flakes (optional)
Rice
- 2 cups cooked rice
Instructions
- In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned. Remove from skillet and set aside.
- Add onion to the skillet and cook until softened.
- Stir in pineapple chunks, soy sauce, honey, rice vinegar, garlic, and red pepper flakes (if using).
- Return chicken to the skillet and toss to coat.
- Serve over cooked rice.
Notes
For a spicier dish, add more red pepper flakes. Serve with a side salad or steamed vegetables for a complete meal.
