Chicken

  • 1 pound boneless, skinless chicken breasts (thinly sliced)

Base

  • 1 tablespoon olive oil

Vegetables

  • 1/2 onion chopped

Fruit

  • 1 can (15 oz) pineapple chunks (drained)

Sauce

  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1/4 cup rice vinegar
  • 1 clove garlic (minced)
  • 1/4 teaspoon red pepper flakes (optional)

Rice

  • 2 cups cooked rice

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned. Remove from skillet and set aside.
  2. Add onion to the skillet and cook until softened.
  3. Stir in pineapple chunks, soy sauce, honey, rice vinegar, garlic, and red pepper flakes (if using).
  4. Return chicken to the skillet and toss to coat.
  5. Serve over cooked rice.

Notes

For a spicier dish, add more red pepper flakes. Serve with a side salad or steamed vegetables for a complete meal.
