  • 450 grams (2 cups) peaches, peeled and cut into small pieces
  • 30 grams (2 tablespoons) granulated sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon almond extract

Instructions

  1. Preheat oven to 350°F (177°C). Grease an 8-inch square dish and line with parchment paper.
  2. Chop peaches into ½-1 inch pieces. Mix with lemon juice and almond extract.
  3. Toss peaches with cornstarch and sugar. Set aside.
  4. In a medium bowl, mix flour, rolled oats, sugar, cinnamon, and salt.
  5. Add melted butter to the dry ingredients and stir with a spoon.
  6. Place two-thirds of the mixture into the prepared dish and spread evenly.
  7. Cover the crust with the peach mixture, leaving excess liquid in the bowl.
  8. Sprinkle remaining dough over the peaches, making some big crumble pieces.
  9. Bake for 33-35 minutes until golden brown and crumbles are crunchy.
  10. Cool at room temperature for 1 hour, then refrigerate for 1.5 hours before cutting.
