Ingredients
- 5 large peaches, peeled and sliced
- 1 1/2 cups fresh blueberries
- 3/4 cup granulated sugar, divided
- 2 tbsp cornstarch
- 1 tbsp lemon zest
- 2 tbsp lemon juice
- 1 1/4 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup heavy cream
- 1 large egg yolk
- 1 tsp vanilla extract
- 2 tbsp coarse sugar for sprinkling
Instructions
- Preheat the oven to 375°F (190°C) and butter a 9×13 inch baking dish.
- In a large bowl, gently combine the peaches, blueberries, 1/2 cup granulated sugar, cornstarch, lemon zest, and lemon juice until fruit is coated.
- Pour the fruit mixture into the prepared baking dish and spread evenly.
- In another bowl, mix the flour, remaining 1/4 cup granulated sugar, baking powder, and salt.
- Cut in the cold, cubed butter using a pastry cutter or fork, until the mixture resembles coarse meal.
- In a small bowl, whisk together the heavy cream, egg yolk, and vanilla extract.
- Stir the cream mixture into the dry ingredients to form a soft dough.
- Drop large spoonfuls of dough evenly over the fruit mixture, leaving some gaps.
- Sprinkle the dough topping with coarse sugar.
- Bake for 35-40 minutes, or until the topping is golden brown and the fruit is bubbling.
- Allow to cool slightly before serving.
Notes
For substitutions, try frozen peaches or blueberries (thawed and drained), or swap heavy cream for half-and-half. Make the dough in advance and keep refrigerated for up to a day; assemble before baking. Store leftovers, covered, in the refrigerator for up to 3 days. To reheat, warm in a low oven to refresh the topping. If your dough is too crumbly, add a touch more cream. Ensure fruit is ripe for best flavor and avoid overmixing the topping.
