Instructions

  1. Preheat the oven to 375°F (190°C) and butter a 9×13 inch baking dish.
  2. In a large bowl, gently combine the peaches, blueberries, 1/2 cup granulated sugar, cornstarch, lemon zest, and lemon juice until fruit is coated.
  3. Pour the fruit mixture into the prepared baking dish and spread evenly.
  4. In another bowl, mix the flour, remaining 1/4 cup granulated sugar, baking powder, and salt.
  5. Cut in the cold, cubed butter using a pastry cutter or fork, until the mixture resembles coarse meal.
  6. In a small bowl, whisk together the heavy cream, egg yolk, and vanilla extract.
  7. Stir the cream mixture into the dry ingredients to form a soft dough.
  8. Drop large spoonfuls of dough evenly over the fruit mixture, leaving some gaps.
  9. Sprinkle the dough topping with coarse sugar.
  10. Bake for 35-40 minutes, or until the topping is golden brown and the fruit is bubbling.
  11. Allow to cool slightly before serving.

Notes

For substitutions, try frozen peaches or blueberries (thawed and drained), or swap heavy cream for half-and-half.
