Instructions

- Make the Pancake Layer: In a mixing bowl, whisk together the pancake mix, milk, eggs, and vanilla extract until smooth. Pour the batter evenly into the bottom of the prepared baking dish.
- Add the Sausage Layer: Sprinkle the cooked and crumbled sausage evenly over the pancake batter. If using veggies, layer them on top of the sausage.
- Prepare the Egg Layer: In another bowl, whisk together the eggs, milk, salt, and pepper until well combined. Pour the egg mixture evenly over the sausage layer.
