Ingredients
- 2 pounds potatoes, sliced into ½-inch-thick rounds

Instructions
- Preheat the oven to 400°F (200°C).
- Slice the potatoes into ½-inch thick rounds and cut the onion into quarters.
- In a large mixing bowl, combine canola oil, olive oil, chopped garlic, and onion soup mix. Mix well.
- Toss the potatoes and onions in the seasoning mixture until evenly coated.
- Arrange the seasoned potatoes and onions in a single layer on a baking sheet. Use two sheets if necessary to avoid overcrowding.
