Description

Juicy chicken thighs are seared to perfection and simmered in a rich garlic butter sauce with hints of herbs. This easy one-pan meal is packed with flavor, requires minimal cleanup, and is perfect for busy weeknights or a cozy family dinner.


Ingredients

  • 4 bone-in, skin-on chicken thighs (or chicken breasts)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 6 garlic cloves, minced
  • 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
  • 1 teaspoon fresh rosemary (optional)
  • ½ cup chicken broth
  • Juice of half a lemon
  • Salt and black pepper to taste

Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Season chicken thighs with salt and pepper.
  • Place chicken skin-side down in the skillet and sear for 5-7 minutes until crispy and golden. Flip and cook for another 5 minutes. Remove and set aside.
  • Reduce heat to medium, add butter to the skillet, and stir in minced garlic, thyme, and rosemary. Cook for 1-2 minutes until fragrant.
  • Pour in chicken broth and lemon juice, scraping up any browned bits from the pan.
  • Return chicken to the skillet, spooning some sauce over each piece.
  • Cover and simmer for 10-15 minutes until the chicken is cooked through (165°F internal temperature).
  • Serve with sauce drizzled on top and garnish with fresh herbs if desired.

  • Use boneless chicken breasts for a quicker cook time, but keep an eye on moisture to avoid drying out.
