Ingredients
Scale
- 4 bone-in, skin-on chicken thighs (or chicken breasts)
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 6 garlic cloves, minced
- 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
- 1 teaspoon fresh rosemary (optional)
- ½ cup chicken broth
- Juice of half a lemon
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken thighs with salt and pepper.
- Place chicken skin-side down in the skillet and sear for 5-7 minutes until crispy and golden. Flip and cook for another 5 minutes. Remove and set aside.
- Reduce heat to medium, add butter to the skillet, and stir in minced garlic, thyme, and rosemary. Cook for 1-2 minutes until fragrant.
- Pour in chicken broth and lemon juice, scraping up any browned bits from the pan.
- Return chicken to the skillet, spooning some sauce over each piece.
- Cover and simmer for 10-15 minutes until the chicken is cooked through (165°F internal temperature).
- Serve with sauce drizzled on top and garnish with fresh herbs if desired.
Notes
- Use boneless chicken breasts for a quicker cook time, but keep an eye on moisture to avoid drying out.
- Substitute vegetable broth for chicken broth if needed.
- Store leftovers in an airtight container for up to 3 days in the refrigerator.
