  • 1 small onion, finely diced
  • 3 garlic cloves, minced
  • 1 tsp red pepper flakes (optional)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne pasta
  • ½ cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

  1. Prepare the Chicken Thighs:
    Pat chicken thighs dry. Season both sides with salt, pepper, paprika, and garlic powder.
  2. Sear the Chicken:
    Heat olive oil in a large oven-safe skillet over medium-high heat. Place chicken thighs skin-side down and sear for 5-7 minutes until golden and crispy. Flip and cook for 3 more minutes. Remove and set aside.
  3. Sauté the Aromatics:
    Melt butter in the same pan. Add onion and cook for 3-4 minutes until soft. Stir in garlic and red pepper flakes, cooking for 1 minute until fragrant.
  4. Simmer the Pasta:
    Add chicken broth and heavy cream, stirring well. Add the pasta and bring to a boil. Reduce heat to a simmer, cover, and cook for 10-12 minutes, stirring occasionally.
  5. Return Chicken to the Pan:
    Nestle chicken thighs back into the pasta mixture. Sprinkle with Parmesan cheese. Simmer uncovered for 5-7 minutes until pasta absorbs the liquid and chicken is fully cooked.
  6. Garnish and Serve:
    Remove from heat. Garnish with fresh basil or parsley. Serve hot with extra Parmesan if desired.
