Ingredients
- 8 large ripe peaches, peeled and sliced
- 1 cup granulated sugar, divided
- 1/4 cup brown sugar
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/3 cup unsalted butter
- 3/4 cup buttermilk
- 1/2 tsp ground cinnamon
- Pinch of nutmeg
Instructions
- Preheat oven to 375°F and grease a 9×13 inch baking dish.
- In a large bowl, combine peaches, 1/2 cup granulated sugar, brown sugar, vanilla extract, and almond extract.
- Allow the peach mixture to macerate for 15 minutes.
- Place the butter in the prepared baking dish and melt it in the oven.
- In another bowl, mix together flour, remaining 1/2 cup of granulated sugar, baking powder, salt, cinnamon, and nutmeg.
- Gradually whisk buttermilk into the dry mixture until smooth.
- Pour the batter over the melted butter in the baking dish, distributing it evenly without mixing.
- Spoon the macerated peaches and their juices evenly over the batter.
- Bake for 40-45 minutes, until the cobbler is golden brown and the batter has risen around the peaches.
- Allow to cool slightly before serving. Enjoy warm.
Notes
For substitutions, try nectarines or canned peaches if fresh are unavailable. To make ahead, assemble the cobbler up to baking, cover, and refrigerate for up to 8 hours. Bake just before serving. Store leftovers covered at room temperature for up to 2 days or refrigerate for up to 4 days. If your cobbler is too runny, bake longer or use slightly less juice—overly ripe peaches add excess moisture. For gluten-free, substitute 1:1 GF flour. Reheat servings in the oven for a crisp top.
