Description

No-Bake Peanut Butter Balls are a delightful no-fuss treat featuring a creamy peanut butter and butter mixture, sweetened with powdered sugar, shaped into bite-sized balls, then coated in silky melted chocolate. Perfect as a quick dessert or snack, they require no baking, making them an excellent choice for busy schedules and warm days. Both creamy and crunchy, they deliver sweet satisfaction with every single bite.

Ingredients

Scale
  • 1 1/2 cups creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar
  • 2 cups semi-sweet chocolate chips
  • 2 teaspoons coconut oil or shortening (optional, for smoother melting)

Instructions

  1. In a large mixing bowl, beat together the peanut butter, softened butter, and vanilla extract until smooth.
  2. Gradually add the powdered sugar, mixing until a thick, dough-like consistency forms.
  3. Roll tablespoon-sized portions of the peanut butter mixture into balls and place them on a parchment-lined baking sheet.
  4. Refrigerate the balls for at least 30 minutes, or until firm.
  5. In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring after each interval, until smooth.
  6. Using a fork or dipping tool, dip each peanut butter ball into the melted chocolate, letting the excess drip off.
  7. Place the coated balls back onto the parchment-lined baking sheet.
  8. Refrigerate the coated peanut butter balls for 20-30 minutes, or until the chocolate is fully set.
  9. Store in an airtight container in the refrigerator for up to 1 week.

Notes

For dairy-free or vegan needs, use plant-based butter and certified dairy-free chocolate chips. Almond or sunflower seed butter may replace peanut butter for allergies. Make ahead and store in an airtight container in the fridge up to one week or freeze for up to two months. If mixture is too sticky, add more powdered sugar; if too crumbly, a splash of milk can help. Prevent chocolate cracks by allowing the peanut butter balls to warm slightly before dipping.
