Ingredients

Scale
  • 1½ cups graham cracker crumbs
  • ½ cup melted butter
  • ¼ cup sugar
  • 1 package (3.4 oz) instant banana cream pudding mix
  • 2 cups cold milk
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 2 ripe bananas (sliced)
  • Whipped cream for topping
  • Honey for drizzling

Instructions

  1. Mix graham cracker crumbs, melted butter, and sugar in a bowl.
  2. Press mixture firmly into muffin tins to form mini crusts.
  3. Refrigerate for 1 hour to set.
  4. Prepare banana cream pudding by whisking pudding mix with cold milk until thickened.
  5. Chill pudding for 5 minutes.
  6. Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
  7. Fold half the whipped cream into pudding mixture.
  8. Fill chilled crusts with pudding mixture.
  9. Top with a dollop of whipped cream, banana slices, and honey drizzle.
  10. Chill further if desired or serve immediately.

Notes

For a gluten-free version, substitute gluten-free graham crackers. Use vanilla pudding if banana cream is unavailable; add a mashed banana to enhance flavor. Prepare bases and pudding a day ahead and store crusts and filling separately; assemble before serving. Keep pies refrigerated in an airtight container up to 3 days. If crusts are too crumbly, add more butter; if pudding is thin, chill longer. Bananas can be brushed with lemon juice to prevent browning.
