  • 2 tbsp turbinado sugar

Instructions

  1. Preheat oven to 375°F. Butter a 2-quart baking dish.
  2. In a large bowl, combine blueberries, blackberries, raspberries, 1/2 cup granulated sugar, cornstarch, and lemon juice. Mix gently to coat the berries.
  3. Transfer the berry mixture to the prepared baking dish, spreading evenly.
  4. In a separate bowl, whisk together flour, remaining 1/2 cup sugar, baking powder, and salt.
  5. Cut the cold cubed butter into the flour mixture using a pastry cutter or fingers until it resembles coarse crumbs.
  6. In another bowl, whisk together heavy cream and egg. Add to the flour mixture, stirring until just combined.
  7. Drop spoonfuls of dough over the berry filling, leaving some gaps. Sprinkle with turbinado sugar.
  8. Bake for 35–40 minutes, or until the topping is golden brown and the berries are bubbling around the edges.
  9. Let cool slightly before serving.

Notes

You can substitute frozen berries for fresh—do not thaw before use. For a dairy-free version, use chilled coconut cream and plant-based butter. Store leftovers covered in the refrigerator for up to 3 days; reheat gently before serving. If the topping browns too quickly, tent with foil for the last 10 minutes. If the berry filling seems runny, add extra cornstarch. For gluten-free, switch to a gluten-free baking blend.
